The second turkey for thanksgiving will be cooked on a Weber kettle. I'm looking for a recipe for smoked turkey that doesn't turn our rubbery skin.

Fine Cooking had a John Ash recipe that looks pretty simple but I'm not sure about all the stuff in the brine. www.finecooking.com/.../maple-brined-wo ... turkey.asp

Any thoughts?

I'm actually going to try this recipe on my "smoker" It is hard for me to vision a smoked turkey with crisp skin...does not compute...
