I was thinking about making sweet potato latkes with toasted marshmallows as a riff on sweet potato casserole and pecan pie rugelach with dried cranberries (to temper the sweetness a bit. What do you guys think?

Nancy,

If you make latkes with just sweet potatoes (and no russets), then you'll need to add some starch slurry to the batter; I use a mixture of either flour or tapioca starch and water, although potato starch would probably be more appropriate. You'll also need somewhat more eggs.

Thanks for the suggestions, Fuzzy. I figured I'd need to add something hold the mixture together. Sounds like sweet potatoes require a little something different/more than regular latkes.
