I'm doing an event in a couple of weeks that is basically pro bono. It's a buffet for 30, and it's the type of event where I need to have a vegetarian entreé...and one that will hold well in a chafing dish. My non-vegetarian will likely be something like chicken because it's cheap, maybe something like Chicken Do-Piaza.

Ideas?

Eggplant Parm? Tofu pad Thai? For this time of year stuffed zucchinis are nice, because you can use those huge ones.

I think A Grand Aioli sounds perfect. A great way to use seasonal vegetables and everyone can have what they like.......Can I come?

Even simpler, but I've never known anyone who didn't like it, is the spinach and mushroom strata from CI
