I've made Pennie's caramels before subbing part of the butter with bacon fat (they were a tad greasy, but yum!). Not sure how much would be appropriate in the toffee, but I'd start with 2-3 oz and go from there. I would stir in bacon bits at the last minute.

Sounds like a yummy experiment!

I might just stick with the bacon bits and not add the fat. Seems to me the buttery toffee would be really good with a punch of bacon bits.
