Post subject:  Potato chip recipe?

Does anyone have experience with making potato chips or crisps? I am thinking about that as part of my Christmas eve deal, with some champagne and of course a bunch of other stuff.

I've found recipes online but they are lacking type of potato preferred, treating the potatoes before frying?, temperature of oil, and if they keep. i.e. can I make them in the afternoon and then recrisp in the oven, OR will they be ok made a few hours ahead and served with a drink later. :?:

3-3.5 lbs Idaho potatoes
3 pints vegetable oil
3 tbs butter
1 tbs pressed garlic [note, not certain what this is, garlic through a press?]
2 tbs chopped parsley
1 tsp salt
1/8 tsp freshly ground pepper

With mandoline slice potatoes 1/16 inch thick. Rinse in large bowl with runing water until water runs clear. Dry in salad spinner then on paper towels.

Put oil in tall sauce pan, should not be more than 1/4 full and 1 1/4 to 1 1/2 inches deep, heat to 315 F.

In three batches fry potatoes until light brown and crisp, stiring constantly but gently with slotted spoon. Each batch should take 15-20 minutes. As each is done place on half sheet lined with paper towels, after last batch has been on sheet a few minutes place in large bowl.

heat butter and garlic over a medium flame, don't let the garlic brown. Drizzle butter and garlic over chips, add parsley, salt and pepper and toss. Don't crush chips.

Serve hot.

To make ahead store the fried chips in an air tight container until needed. Reheat in a 350 F oven and then toss with the seasoned garlic butter, parsley, salt and pepper just before serving.

Adapted from The Union Square Cafe, where if you usually order this it will show up at your table unbidden with drinks. We have been there perhaps 10 times in 20 years or so, and we no longer even need ask.

My guess is you could spice the chips just about any way you would like.

I second the recommendation for Union Square Cafe's garlic potato chips. They're awesome. The recipe is published at food network. Union Square Cafe garlic potato chips

I have been so jonesing on potato chips, just got a big bag of kettle chips and almost polished them off while out on errands. I can't wait to make these.
