That's an old technique for braiding Danish pastries. (as they're called in the US)
With just a little practice you can get very fast.

I have a similar recipe called peperoni bread. It includes sauce, peperoni and cheese. I have added ground meats as well. Mine rolls up like a sweet roll rather than the braiding.
