Now that I have my smoking gun, I want to try some pork ribs sous vide. Frank, Lou, et al, what's your favorite sauce recipe?

I seldom use sauce, good "Q" like a good steak needs anything added.

Here is our favorite - it's a tangy sauce, not a sweet one, but my husband and I have tried probably dozens of recipes and when we serve this alongside traditional sweet or tomato-y sauces this one is always gone first.

It's from Recipegullet, by member =Mark. The comments below are his, not mine. The changes we make are to omit the white pepper (can't stand the stuff) and of course we use Crystal hot sauce. We use more than 4 drops but I don't know exactly how much.

South Carolina Mustard Barbecue Sauce
2/3 c yellow prepared mustard
1/2 c white sugar
1/4 c light brown sugar
1 c cider vinegar
2 T chili powder
1 tsp black pepper
1 tsp white pepper
1/2 tsp cayenne pepper
4 drops Tabasco
1/2 tsp soy sauce
2 T butter

Combine all ingredients except the soy sauce and butter in a saucepan and simmer 10 minutes. Remove from heat. Stir in soy sauce and butter. May be used as a basting sauce for barbecue meat or as a condiment.

I also added the juice of 1 lime and spiced it up quite a bit.
Experiment and enjoy!

Oh that sounds good. I'm always looking for a good BBQ sauce too. I like mine with a little kick.

I'm with Frank on this one: the Yankee has been converted by his Texan wife. Good BBQ needs no sauce. No wonder when I go to KC, Nashville, or anywhere else am I disappointed.

Just give me a rack, a deckle, or some sausage and some post-oak and mesquite along with salt and pepper* and I'm a happy guy.

...lou

*With a pinch of cayenne.....

All,

Does anyone have a recipe for a slow-cooked tomato-vinegar BBQ sauce, though? A "red" sauce?

I've been looking for one for a while to go with the Neatloaf. While some of the bottled stuff is OK, I think I really need to make my own.

Lou and his sassy liver bring us such an international flair - what the heck is a deckle anyways??

I only wish I had a good bbq sauce recipe to share.
