You could do a chutney instead of more raita:
- 2tbs grated fresh coconut
- 1-3 fresh green chiles, seeded (omit for mild chutney)
- 1 tsp sugar
- 2 tsp grated ginger
- 1/2 cup yogurt
- 2 tbs vegetable oil
- 2 tsp black (or brown) mustard seeds
- 6-8 curry leaves (subs. 2 tsp whole coriander seeds)
Puree the coconut, chiles, sugar, ginger and yogurt.
Heat the oil and saute the mustard seeds and curry leaves until the seeds pop. Mix into the chutney. Chill and serve.
