Darcie, I made waffles this morning using your pancake recipe...it was wonderful....the recipe yields 7 pancakes...thanks again!

Just a little bump for a GREAT recipe - Darcie, I made these for my birthday breakfast for the 2 princesses that rule the house. Once again, these really are fantastic :!: :D

Dang, just very recently I made some bad pancakes (gummy, Delia recipe) and wish I had this recipe to work from.

For waffles, I normally use whipped egg whites as the leavening agent. Be interesting to taste/see how this one would differ.

Just copied the recipe. DD, DSIL and grandkids coming today, so probably will make tomorrow am. so thank you for the recipe. I do have one question. Darcie's has eggs separated, Jean does not. Any differences? TIA

Alina - this is the recipe I have and use:

Darcie Boschee
Flip the pancakes gently so as not to deflate the bubbles that make them light and airy.
Pancakes Makes about 8 (5-inch) pancakes. Best to double this recipe and freeze left overs. Use 2/3 cup for waffles.
4 ounces cake flour
5 ounces all-purpose flour
2 tablespoons granulated sugar
½ teaspoon baking soda
½ teaspoon salt
1 large egg
3 tablespoons melted butter
1.25 cups buttermilk or soured milk
1 teaspoon vanilla extract (optional)
Try 1 teaspoon of lemon extract
1. MELT butter in a small bowl in the microwave and set aside to cool.
2. PUT all of the dry ingredients into a large mixing bowl and stir to combine.
3. WHISK the egg into the melted, but slightly cooled, butter.
4. ADD the buttermilk or milk and vanilla extract to the butter mixture.
5. STIR well to combine (the butter will make tiny clumps -- don't worry about these.
6. ADD the liquid ingredients to the dry ingredients all at once.
7. STIR with a whisk until most dry ingredients are moistened, but don't over beat (you will have a few small lumps in the batter).
HEAT a nonstick skillet or griddle over medium heat 400F is fine (when a drop of water just starts to sizzle, it's ready). With a ladle or measuring cup, scoop about 1/3 cup batter into the skillet and spread out if necessary. Wait until bubbles start to form on the surface of the batter, 1 to 2 minutes. Peek under the pancake to make sure it's brown enough, then gently turn it over and cook for another 30 seconds to 1 minute, or until browned on the bottom side. Adjust heat as necessary.
KEEP cooked pancakes warm in a 200-degree oven while making the rest.

Thank you so much. Just copied the changes and suggestions. DD wants Challah french toast first, so will make it later this week.

PS, I noticed you added lemon extract. I've always added orange extract to my pancake batter, so I planned to add it to this one as well.

DH made pancakes for me for mother's day, not using Darcie's recipe (he does an internet search instead of looking in my binder!) and we had some leftover in the freezer, plus some from the last time i made pancakes. We reheated both before we left for camping....what a difference to the 2 side by side!!!! I will try orange extract too, am thinking that and cranberries might be a nice breakfast touch.

I am so glad that my pancakes have pleased so many people. It gives me a warm feeling inside :)

I don't recall if I mentioned it before, but sometimes I like to throw in a couple of tablespoons of malted milk powder.
