jeanf, can you make sure this is the same as what was published? I can't seem to find the article and I'm doing this from a previous blog post. I may have tweaked the recipe a little since then...

Pancakes

1 cup (4 oz.) cake flour
1 cup (5 oz.) unbleached all purpose flour
2 tablespoons granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
3 tablespoons melted unsalted butter
1 1/4 cups buttermilk OR
3 tablespoons buttermilk powder and 1 1/4 cups 2% milk
Dash of vanilla extract (optional)

Put the dry ingredients in medium mixing bowl and stir to combine. Separate the egg and put the yolk in the melted, but slightly cooled, butter. Mix the white with the buttermilk or milk and vanilla extract, if using. Pour the egg/butter mixture into the milk mixture, stirring well to combine.

Add the liquid ingredients to the dry ingredients all at once. Stir to combine but don't over beat (you will have a few lumps left in the batter). Heat nonstick skillet or griddle over medium heat. DO NOT oil the skillet or griddle. Pour batter into the skillet to achieve the size of pancake you want, then wait until bubbles start to form on the surface of the batter. Peek under the pancake to make sure it's brown enough, then gently turn it over and cook for another 30 seconds to 1 minute, or until browned on the bottom side. Eat. Yum.

I think so....this is what I have and includes a sour milk option. Which is what I used.

Pancakes

Makes about 8 (5-inch) pancakes.

1 cup cake flour – 4 ounces
1 cup all-purpose flour – 5 ounces
2 tablespoons granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
3 tablespoons melted butter
1 1/4 cups buttermilk or soured milk OR 3 tablespoons buttermilk powder and 1 1/4 cups 2 percent milk
1 teaspoon vanilla extract (optional)

MELT butter in a small bowl in the microwave and set aside to cool.

PUT all of the dry ingredients into a large mixing bowl and stir to combine.

WHISK the egg into the melted, but slightly cooled, butter.

ADD the buttermilk or milk and vanilla extract to the butter mixture.

STIR well to combine (the butter will make tiny clumps -- don't worry about these.

ADD the liquid ingredients to the dry ingredients all at once.

STIR with a whisk until most dry ingredients are moistened, but don't over beat (you will have a few small lumps in the batter).

HEAT a nonstick skillet or griddle over medium heat (when a drop of water just starts to sizzle, it's ready). With a ladle or measuring cup, scoop about 1/3 cup batter into the skillet and spread out if necessary. Wait until bubbles start to form on the surface of the batter, 1 to 2 minutes. Peek under the pancake to make sure it's brown enough, then gently turn it over and cook for another 30 seconds to 1 minute, or until browned on the bottom side. Adjust heat as necessary.

KEEP cooked pancakes warm in a 200-degree oven while making the rest.

and for those that don't see me on facebook, I made these again this morning and again....WOW. Even with some white whole wheat flour still so very light and fluffy. And the rise.....unbelievable.

I gave this to my physio who cooked it on the weekend for her large family - they all bow in your direction. This is a killer recipe - weird - but KILLER! :D

Just a nice update: I had a hunch this batter would make an excellent waffle - OH MY :!:

I use a 7" Belgian with 2/3 cup batter and spread it out across the iron. (More than this and not spreading it works but it is a really substantial waffle.) Play with it a bit but this is now my #1 waffle mixture TIED as it is with being my #1 pancake mixture. And they both freeze beautifully: bring to room temperature and use the toaster on a relative low setting - good a new! :D :!:

Thanks Wino for the review...I currently use Pam Anderson's waffle recipe and it's okay...nothing to brag about...will give this one a try!

Thank you Darcie for a wonderful recipe!!!!! I made these this morning and they were wonderful!!! I also took wino's suggestion and used the batter in my waffle iron and they were terrific...is this your personal recipe? Thanks again for sharing.

Yep, this is a recipe I developed after a lot of trial and error (mostly error). I'm glad you like them!

Sounds really great. I am saving it for when I am no longer low-carbing. I love pancakes and waffles, something I miss right now.
