What is scalloped corn? Is it like scalloped potatoes, but with kernals of corn replacing the potato?

I believe it is a SW USA dish, popular for sure in Arizona. Essentially, from various cooking sites I've visited, it is a combination of canned corned (creamed and/or otherwise) mixed with eggs, onions, cracker crumbs or corn muffin mix, salt, pepper, butter, a dairy product like sour cream or milk or cream, all mixed and baked for 20-40 minutes - with many variations. I thought the ingredients read as not very interesting but the dish I was served was delicious. I assumed/hoped some of the members would have opinions and recipes. It has an interesting label as well! :roll:

Besides, maybe Da Bull Man can figure out a way to serve it with chili...!!! :lol:

Can't help with a recipe....I've never seen (or tasted it) it. Not a popular Colorado dish. Hopefully someone else will come along and provide you with a good recipe. Sounds like a perfect side for Texas style Chili

My little sister makes this, although she calls it "corn casserole". She gave me her recipe this morning. It should be noted that Sarah is more of a seat-of-her-pants, make-it-up-as-you-go-along sort of cook. In other words, she's got talent but no training. I've got training, but no real talent. Parenthetical statements are mine.

Sarah's Corn Casserole

1 (15 oz) can of cream-style corn
1 (8.5 oz) box of Jiffy corn muffin mix (you can use any brand, but Jiffy is tastiest.)
1/2 cup butter, melted
1 egg
1/2 cup chopped onion
Salt and pepper, to taste
Enough frozen corn kernels to fill the, now empty, cream-style corn can about 3/4 full (orn 1 15oz can of whole kernal corn, drained)
1/3 cup sour cream

Mix all together and pour into a 8x8 baking pan (I'd Pam that first.). Bake at 350 F for about 45 min. If you like more crust and less casserole, pour it into a 13x9 pan and bake for about 25 min.

I'm pretty sure she based this dish on this one. Obviously, she likes it a little drier. If it were me, I'd sautée those onions, first. Oh, and a handful of scallions sprinkled on top would be pretty.

Sarah's Corn Casserole is pretty close to the one I make.

Corn Bread Pudding
2 eggs
1 cup light sour cream
1 can (15 1/4 oz) whole kernel corn
1 can (15 1/4 oz) creamed corn
1/2 cup melted butter
1 pkg corn bread/muffin mix (I use Jiffy)
1 c shredded cheese (optional)
In a large bowl, combine first five ingredients. Stir in corn bread mix until just blended. Pour into a greased 3 qt baking dish. Sprinkle cheese on top.

Bake uncovered at 350 degrees 40-45 minutes.

It's wonderful!

This is great; I will be testing over the next few weeks and report back. Interestingly, the Safeway here does NOT carry corn muffin mix, so I will just make my own. They have 10 other types, but ...

I am getting quite worried about Da Bull Man...very strange to be able to mention 'chili' and not get some acknowledgement. However, I was off the board for about a week when the dreaded flu bug bit so maybe he is lying low.

Boy, you have been chased out of a lot of places... ;)

That critter I'm holding is the culmination of a rather outrageous 'fishing' trip on the last day of the season, March 31, 2007 when we happened to have unbelievably warm weather. We close fishing for all of April to let the little ones get started. Anyway, after a few bottles of cabernet, etc. and using a pickeral rig propped on stick, I got tired of catching nothing and reeled in this monstrous fresh water clam that had been happily munching on my hors d'oeuvre. He put up one helluva fight!!! I later learned from the local and adventurous conservation official that they taste terrible, "I'd rather chew off my left arm than repeat that experience!"

Hopefully, the scalloped corn will be better.
