Frank, how wonderful for your family!! Congratulations.

My tiny kitchen is always warm, and I never have had any delamination.

Been thinkin' (seldom a good thing)

Does anyone know of a source for a mold that might fit into the 10' x 15" jellyroll pan that would mold the toffee into small squares? I'm thinking about 1" square would be just about right. I would like to pour the hot toffee into the pan then press the mold into the hot toffee.

I finished my 30th batch this season last evening.... :P

Try this site.

http://www.shopchefrubber.com/Food-Grad ... ne-Moulds/

Also check out the Ganache molds. It looks like they are also made out of silicone and might be able to take the heat of the toffee.

JB,

I couldn't see the specifications, you think it would take the 315*+ heat?

This is close...I was sure hoping for something I could press into the molten toffee...
