From what I understand about doubling a candy recipe I learned up on Mackinac Island. It will work if you have a big enough pot and a hot enough heat source otherwise, it just doesn't work well at home. If you watch them cooking the fudge on the island, they use these big Copper pots that look more like deep Woks then pots and they have a really hot flame underneath.

Knocked out 8 batches (24 lbs) yesterday evening. Running total = 10 batches / 30 lbs. Gonna try to get all of it done by monday, I'll be traveling for the next two weeks so time is getting short!

It seems to be better with a little age on it, young toffee does not seem as good to me.

have you used the released foil instead of buttering regular foil?

I'm not Frank, but I use parchment instead of foil and have had no problems with sticking. I don't butter the parchment, either (I'm lazy like that).

Yes, I use unbuttered release foil exclusivly.

Well...the close of toffee season is upon us...to date I made 33 batches (96 lbs) I have 9 more batches promised then I am done :!:

I have created a monster :( These people begin hovering and hinting about Thanksgiving that they "sure like that toffee" I fear revolt if they are denied. I may need to fake my own death to escape... :shock:
