Sams used to sell Guittard Chocolate Chips that I really liked for cookies. I still use their recipe that was on the back of the bag.

Drats Frank....your post reminded me that it is time to begin truffle mania. I can't imagine making the volume you make, producing 600 truffles between now and the holidays is daunting for me....can I borrow a kitchen slave?

Frank,
Check out www.buy.com I found a deal for 2 rolls for $19.95 with Free shipping. There might be some better deals, but this was at the top of the list.

I buy the foodsaver rolls at Costco. But you get the smaller width rolls along with the larger.
Glad to hear she's arrived and adjusting to the heat. ;-) You are now even more in the minority in your house.
now off to check gygi.com

There are some cheaper (relatively) rolls at buy.com but I've had mixed results with the "compatible" bags I've bought from eBay so I'd be wary.

The ugly secret with a Foodsaver is that the cost of consumables is a signficant fraction of the savings obtained by buying in bulk and repackaging. Somewhere between 50 cents and a dollar a foot for rolls, for example.

Todd,
Sunny gave me a nut chopper http://www.amazon.com/Progressive-Inter ... 996&sr=8-1 during one of the cooking breaks during one of the many of the "Cliques" clandestine exclusive remote meetings where we were planning to take over TOBB and eventually the World and exclude and possibly execute all infidels…

I remove the bottom portion and grind directly over the melted chocolate, I then press the nuts into the chocolate with a flat bottomed glass. When finished you really cannot see any chocolate.

Frank, I just ordered one of the nut chopper based on your say so. ;-) Am hoping this saves me some time at Christmas and when we make the teacher gifts at the end of the year.
