Sams used to sell Guittard Chocolate Chips that I really liked for cookies. I still use their recipe that was on the back of the bag.

Drats Frank....your post reminded me that it is time to begin truffle mania. I can't imagine making the volume you make, producing 600 truffles between now and the holidays is daunting for me....can I borrow a kitchen slave?

I buy the foodsaver rolls at Costco. But you get the smaller width rolls along with the larger. Glad to hear she's arrived and adjusting to the heat. You are now even more in the minority in your house. now off to check gygi.com

There are some cheaper (relatively) rolls at buy.com but I've had mixed results with the "compatible" bags I've bought from eBay so I'd be wary.
The ugly secret with a Foodsaver is that the cost of consumables is a signficant fraction of the savings obtained by buying in bulk and repackaging. Somewhere between 50 cents and a dollar a foot for rolls, for example.
