In addition to roasting the squash, I'd be inclined to add a bit of cream and a healthy dose of black pepper. Maybe reduce the wine quite a bit and then add the cream. Creamy white wine sauced penne with squash, bacon, pancetta, and chanterelles sounds pretty darned good to me! |
