I tried this last week for my cooking club using vodka and pineapple. We all went nuts. I found a couple more recipes (cranberry spice and a lemon/rosemary/basil one).

Anyone have any smart tips for this? I think I found my Christmas gifts...

It was dead simple: cut up 2 pineapples into cubes and dump a bottle of vodka over them (in a large jar) and then let sit for 3 days or so. The pineapple I used were not very sweet and after 3 days I tasted it and it had a pineapple flavor but was rather rough. The recipe suggested adding another (sweeter) pineapple but I just put in a couple Tb. (if that) of sugar. It was better but still had that edge. 2 days later I tasted it and it was nirvana with a kick. Very smooth, sweet but not overly so. I strained it back into the original bottle (which I then put in the freezer) and used the (very strong) reserved pineapple cubes as a garnish.

I am going today to get a big couple big jars as I used a Tupperware the first time but don't really like the idea of that. I will give you an update.
