 Post subject: Storing and using roasted garlic

We overdid it on roasting garlic, and I have almost a whole large clove leftover.

How should I store this? (in olive oil or dry? - or freeze??). Yes most people might just trash it but it has so much flavor that I hate to part with it without repurposing.

Any bright ideas as to using it?

It was so good, I can't believe this was my first time doing it at home.

I would think it would keep a week in the fridge. I'd remove and mash it, then use in a pasta dish later in the week.

Be careful if you decide to store in olive oil....can go rancid rather quickly and make everyone ill.

I think you can mash it into softened butter, make it into a log and freeze, then slice it to use as a topper on baked potatoes, steak, fish, etc.

My sister often does that with garlic and butter (the freezing thing), then she uses it to make garlic bread.
