Post subject:  Sweet Paprika????

A client, originally from Israel, returned from there recently with a very large jar of 'sweet paprika' and gave me a taste of a chicken rice dish - WOW :!:

Does anyone have some recipes :?:

She gave me about 75 grams or 2.65 ounces - if that helps.

It's amazing how strong really fresh paprika smells/tastes! The first time I discovered this was many years ago, when I first started taking trips to NYC for food shopping, and got some at the old Paprika Weiss, on the upper east side. It was almost like chili powder, without the heat, the smell was so intense!

Look for Hungarian recipes, if you want something that uses a lot of it.

I use paprika quite a bit. I love it sprinkled on oven crisped cauliflower, most veggies, stews, especially goulash. I always use it on scrambled eggs (got the idea from Nero Wolfe novels.)

As I have very little experience with any paprikas, I am not a good judge but what she fed me was delicious. Interestingly, to her it was "...just chicken and rice."

I'll start with some simple recipes and change the paprika types to learn some differences.

I've brought home "oiled paprika" from Israel before. Used it in place of Aleppo pepper in a bunch of Middle Eastern recipes.

Maybe start by getting the recipe for that chicken and rice? Maybe look at Middle Eastern/North African recipes for inspiration? When I was in Israel paprika was sprinkled as a finishing step on hummus, and on toasted pitas that were brushed with oil. I think there was a braised chicken dish that was heavy on the paprika too...
