I was in LasVegas this past week and ate at Andiamo's Steak House at the D LasVegas for dinner on Wednesday night. I ordered Veal Parmigiana for dinner. I was very disappointed in my veal. It was very tough. Aren't veal cutlets supposed to be tenderized with a meat tenderizer? The veal I received was just sliced about an 1/8" thick like a piece of Roast Beef and then breaded.

Good veal, sliced properly, does not really need to be tenderized in my opinion, although that helps of course. That sucks that your meal was not prepared properly.We actually moved away from veal cutlets a few years ago for a variety of reasons (not the least of which was my parents trying to feed 9 grandchildren with veal - $$$ yikes) and now use pork cutlets. My parents buy a shoulder and my aunt (a butcher) slices them for us. Either that or chicken cutlets.
Still trying to get to Vegas......
