 Post subject: storing potatoes

I thought that I read something recently that if you store potatoes with an apple in a paper bag they will last much longer. Am I crazy :lol: or did someone else see this also? :roll:

I am so glad you guys posted this! A friend told me some time ago that he keeps his potatoes in a cardboard box and it keeps them from sprouting for ages. I put some in a box (in a cool dark closet) a week ago and just yesterday I saw that they had sprouted like crazy. :x

I had never seen this advice before and I'm so glad Kathy posted about it.
I always have trouble with my potatoes going soft and sprout-y before I get around to using them. I keep them out in my garage since most of the time it's pretty cool except in summer. I will definitely put an apple with them in the future!

Linda - If you read my link you'll realize that that is exactly what you should not do. I limited my search to results from just the past year and the culprit seems to be gasses given off by some fruits encourage budding.

I'm sure the chemists will step up here any moment... :shock: :D

Too bad, this would have been an easy solution to the spoilage.

Bummer. Yes, we need our food science guys to chime in. I've always been under the impression that you shouldn't store onions and potatoes in the same space, but other than that I'm clueless. Lately it seems like they're sprouting faster than ever and I don't have any extra cool spaces (like in a basement) that would be ideal (supposedly). And the garage definitely ain't gonna work -- it's still 90+ here in Virginia. :(

According to the university of Idaho, 41-45 degrees, 98% humidity, complete darkness, and good air circulation is ideal for potato storage. The further the storage space is from this ideal potato cave, the quicker it will rot, shrivel, sprout and\or turn green.

I remember as a kid the house we owned that had a root cellar. I also remember being sent down to get some potatoes and plunging my hand into a sack and into a rotting potato. Whew!
