Folks,

I don't normally make two batches of poached eggs, because I can do four eggs at once in the steep-sided saute pan I use for poaching. This morning, though, I needed to do 8 eggs, and I encountered a problem with the second batch of four: they started turing into soup instead of setting. The second serving of Cal-Bennies was somewhat ... messy. Where did I most likely screw up?

  • Should have added more acid to the water after the first batch
  • Water probably cooled off and wasn't quite hot enough
  • Too much water movement from taking out first batch of eggs
  • Always have to use a pan of fresh water for each batch of poached eggs
  • Something else

Ideas?

I think it was temp, I also make multiple batches but don't add more acid each time. I also do the Serious Eats strainer trick which helps loads.

Temperature. I never use any acid, and don't have that problem, but off temp will let everything go right to ****. I have sometimes kinda sieved the water (in place) to get rid of excess stray bits of white from the previous batch, just using a hole-ly spoon kinda deal.

1) Water cooled off and the whites wouldn't set fast enough.

2) Did you strain the excess white off before you put them in the water? That makes a huge difference for me and I can do 8 at a time without problem.

Sounds like I should try the Kenji Method one of these days.

Linda, I just don't poach eggs frequently enough for that.
