We had a friend give us a bowl of Meyer lemons, which are expensive here. They are getting old, and I am wondering the best way to preserve the juice for use later Is freezing a good choice? I am not looking for recipes here just the best way to keep it usable longer - both fruit and zest.

Thanks,

Hi Lisa,
I am lucky enough to have a tree that produces wayyyy too many for me to use at once. What I do is grate some zest to freeze (in 1 tsp packets) and squeeze as many lemons as I can (I love my breville citrus juicer). I bought a set of silicone ice cube trays from Sur la Table that make one ounce cubes. The cubes last a long time and I don't feel like I am wasting these special lemons. (Bonus: meyer lemon juice makes really good margaritas when mixed with key lime juice, just sayin")
