Ditto what Amy said about fresh pasta freezing well. For dinner parties I make it in advance, loosely make nests with it on a cookie sheet and freeze it. Bag after freezing and cook it from frozen. I use CI's version with 10oz flour (I use 00) to 3 eggs.

I second Josh's comment about rolling the dough straight from the fridge, Lisa. And once you get the KA attachment, you'll wonder how you lived without it. I made bowties and ravioli for guests this past Friday and it was a fresh (ha) reminder that nothing wows people more than tender homemade pasta filled with delicious ingredients. We fought over the leftovers on Saturday.

The roller attachment can be found quite cheaply on ebay from time to time. I think I paid around $50 or so for my mom's...new in box. I have a manual crank machine that I have yet to use, it's a hand me down from my friend's grandmother.

I use my hand crank all the time. It's easier than getting the KA out plus I don't have the KA attachment. I also mix and roll it out by hand. Frankly, I think it's easier and that's how I learned back in the stone age.

I don't have the KA attachment and use my Atlas for rolling and cutting. I like interacting with the dough in a way I think only manual methods allow.
