I have some DVD's of the French Chef and I watched the episode where she makes Chocolate Mousse. She used Meringue instead of Whipped Cream. How do you make your Chocolate Mousse? I use Whipped Cream.

I like the David Liebovitz adaption of Julia Child's recipe...it is a no cook whipped cream version.

Todd,

There are so many ways to make a chocolate mousse...as I recall from my culinary school days, my pastry chef quoted eight methods (although that's limiting). It really depends on what you're looking for...something rich, something light, something stable, etc. Do you have a preference?

I do a stable one most, as I'm usually doing it for work.

I use heavy cream. My favorite is CI's Dark Chocolate Mousse.
