Only capsicum peppers are part of the nightshade family. Black pepper is unrelated.

Well, you're unlikely to find more than one brand of umeboshi paste unless you live in a large Japanese neighborhood, so take what you can get. For tamarind, brand doesn't matter. The question is whether you get pressed tamarind pulp, or liquid tamarind in a can. The pulp is dehydrated and keeps pretty much forever (6 months out, 2+ years in the fridge), but has to be sliced, hydrated and filtered before use. The liquid is ready-to-use, but doesn't keep very long once opened. Of course, if you're using it all the time, then you'll probably go through it a lot faster than I do.

Note that tamarind is sweeter than tomatoes, so adjust accordingly.

I'd also look at some of the milder citrus. Meyer lemons, for example, can add a nice bit of tartness. Or if you can get your hands on them, dried limes (look in arabic groceries).

To substitute for small amounts of mashed potato in a recipe: stale bread soaked in milk.

Also: sweet potatoes are not nightshades. They're members of the Morning Glory family (yes, really).

I got mine from myspicesage.com, but very happy to see it at Vitacost. I thought I'd checked there, but must have missed it. I like the grinder feature but I got 4 oz. for $7.25 (free shipping) instead of 2.26 oz. for $6.29. myspicesage.com is giving away Saffron this week, so I'll probably get it there again.

Thanks, Alina. I am browsing through Spice Sage -- they have so much info on spices and which alternative seasonings have similar qualities. Oh, by the way, in case you use VitaCost for other things, they have 15% off all FOOD items right now. I don't remember the code, but if you want it, let me know.

Thanks Lexy, I did not need $30.00 worth of spices now, so I ended up placing a Vitacost order.We needed a couple of other things, so I got the grinder and some celery seeds, cornmeal, etc. got the 15%, plus sale prices on a few items and bogo on a couple of vitamins. They have been delivering really fast, so it should be here Monday.
