Thanks everyone for your input. I do have the recipe from CI...will take a look. I do have Jeni's Ice Cream book and tried her Chocolate Ice Cream which uses corn syrup. The result was rock hard ice cream, delicious but I prefer a softer consistency. I will keep everyone posted. I plan to make it this weekend. Thanks again!

Btw, I have a Nikon D90 with a beautiful 50mm lens...it's all about lighting. Thanks for your kind words.

Hardness can be effected by the machine used to make your ice cream, duration of churning and so forth. Of course, even the hard stuff is soft when it comes out of the churn, hardening only after it sets up in the freezer. I've used vodka in naturally flavored ice creams such as Mango or Strawberry to help keep the water in those berries from icing up - with mixed results.

What machine are you using for making your ice cream?

I look at homemade ice cream as something you make about two hours before you eat it. You can make the base a couple of days ahead to age, spin it two hours before, and then let it finish in the freezer for 1-2 hours. Perfect consistency every time.

IF there are leftovers, I just let it warm up before serving and it's never been a problem.

Do you store in a deep freezer??

I had a feeling they were taken with a prime lens! I'm a Canon gal and adore my 60 mm. Do you only shoot your food pics in natural light?

I don't mind the hijack (although I agree with Tatoosh about the machine being a possible reason for the ice cream hardness). I recently bought a 50mm lens and haven't really gotten around to using it much. I look forward to Lu's answers.

It does kind of sound like you're not getting enough air incorporated while churning. That said, I usually let ice cream sit out for 5-10 minutes before scooping, especially kulfi which isn't churned at all.

I have a Cuisinart Ice Cream Maker. I usually churn the ice cream for 25 minutes. I appreciate all the tips and will keep you posted next week.

I take all my food pics using natural light. I find the flash leaves a harsh look on the subject....but then again, I'm a newbie when it comes to photography. I've learned that a good photo is basically about lighting. Find the best light in your home, it may take some time...it may be in your livingroom or garage or bedroom....once you find it, you'll see the difference in your pictures. Hope that helps.

Did anyone ask Picasso what kind of brush he used? You have a great eye and that is what makes the biggest difference.
