I plan to make pecan pralines . One recipe specifies caramelizing some sugar which is then added to the boiling sugar syrup. A similar recipe just includes adding brown sugar to the ingredients from the start Does the extra step of caramelizing sugar add a noticeable flavor improvement? Thanks for your opinions..in advance..

IMO, the caramelizing definitely improves the flavor. The brown sugar is simply adding molasses - good, but not the same.

Thanks for your reply...have never caramelized before...don't mind an extra step if flavor is improved.
