I forgot that somebody took a photo of that cake I made. You can see how much more flan there was than cake, and I had at least 1 cup more, that I put in a mini loaf pan, with just a little cake.

You are welcome. Grandma was my mom who died 2 years ago this week at age 90 and made this flan usually every month until she died. |

So the pictures of my trials and tribulations are posted here in case anyone is curious about what the end product was. BTW, despite the problems I am glad I made this, but will probably not make it again. It was an ok cake. But the individual parts were way better than the whole IMHO. I loved the Cajeta and will make that again. The Chocolate cake is one of the easiest and most forgiving I've ever seen. I mean in how many cakes can you a cup of sugar, scoop some out, add a bit of flour without measuring, extra cocoa to make up for the undetermined amount of extra sugar, bake it for an arbitrary 20 minutes and still have a delicious cake? The mistake cake was better than the real one, which was probably overbaked. So I will make the cake again, on its own adding a bit more cocoa, using extra large eggs instead of large and doubling the recipe so I can make it into a layer cake, frost it and fill it. And the flan was great, but then it always is and it is much easier to make in the pressure cooker. No water mess, and it is cooked in 20 minutes. |

Alina, Really? We loved it at Thanksgiving, and would make it again sometime we felt like being that decadent. However, Kris wasn't making it at 2am, and she bought the cajeta instead of making it, both of which probably make the dessert much easier. |

I found myself separating the flan from the cake and eating them separately. Then again that flan is my absolutely favorite dessert, so I enjoyed it by itself. I've also really enjoyed the mistake cake with fresh raspberries and crème fraîche. The Cajeta was easy to make and I do usually prefer to cook very late at night, my clock is truly reversed. I think I don't want to do go through the water bath problem again. I realize I could solve that by making in a bundt pan. That said, the cake is almost gone and its just the two of us. |
