I'm making a CI slow cooker chicken stew recipe - which I want to freeze. After the stew cooks for 4-6 hours, the recipe says to add 2 cans of cannellini beans (rinsed/drained) and 6 oz. of baby spinach and heat for 10 minutes. My question is this - can I make the entire recipe today (including the beans/spinach) and freeze it or should I freeze it after the stew has cooked but without adding the beans/spinach.

Since I'm doing this in preparation for some minor surgery - I'd prefer to make the entire recipe today and not have to deal with the extra steps while recuperating. But if people think that the stew with the beans and spinach won't freeze well, I'll just freeze the stew and add the beans/spinach before serving.

Thanks for your help!

Gerard

I think whatever you lose in texture will not be noticeable depending on the quality of the meds prescribed for your recovery period.

JesBelle.....lol

Gerard - I would add & freeze the beans and hold off on the spinach. The spinach might turn into green mush upon reheating. Some preservative in some canned beans helps preserve their shape, cannot remember what's it called. Someone else might know....
