I made the macaroons. They are great....but guess what? My kids apparently hate coconut. I however have been really enjoying them.

Jean, these don't use condensed milk, but they are great macaroons. If your kids dislike any coconut taste, you can sub more almond extract, but I'd try them as it at first since they don't have any coconute flakes. I've found that it is the coconut texture rather than the taste that some folks don't like. Anyway, these are not the tradition Jewish ones, but they are my faves.

EXPORTED FROM LIVING COOKBOOK

OVERNIGHT OAT COCONUT MACAROON***** Chewy and caramely with a hint of coconut and almond.

If not using coconut oil, increase coconut flavoring to 1 tsp. For 350 g oats use 246.4 g, coconut oil (melt after measuring), and 1⅛ tsps. of salt and flavorings (egg the same). I had 2 left on a Ziploc bag and somehow it ended up out of sight. When I found it 2 weeks later, then were still pretty good, not as good as fresh, but better than store bought.

Servings: 14 Yield: 42 cookies

Preparation Time: 12 minutes Cooking Time: 18 minutes Inactive Time: 8 hours and 30 minutes Total Time: 9 hours

320 g. quick cooking oats (4 cups)
192 g. brown sugar (1 cup)
224 g. coconut oil melted (1 cup)
2 extra-large eggs beaten
1 tsp. salt
1 tsp. almond emulsion or extract
1 tsp. vanilla extract
1/2 tsp. coconut flavor

Measure coconut oil on scale in Pyrex measuring cup. Then place in microwave to melt oil. Cool to room temp before adding.

Mix oats, sugar and oil and leave overnight. Next day, make a dip in the center of oat mixture, add the eggs, use a fork to lightly mix and then mix well with oats. Add salt and flavorings and mix well.

Preheat oven to convection bake (if available) 325° F.

Use a 50 disher and drop them onto a parchment lined baking sheet. Bake at 325° F for about 16-18 minutes. Remove promptly when they are done. Cool pan in rack for 2 minutes. Remove cookies to rack and cool completely. Store in tin or Ziploc bag.

I forgot to mention that they get sticky and soggy if covered tightly....if you like them a little crispy, don't cover.
