I live with a picky eater, too. However, he loves grits, so grits he gets. Honestly, I'd never made them until 3 months ago.

I think you should prepare everything the night before, put plastic wrap over it, and bake in the am. They "stiffen up" pretty quickly and it would be hard to add liquids after that. IMHO. Same as polenta.

I figured I could loosen them slightly with some hot water. Or maybe we'll just have leftover paczki for breakfast. :D

Grits left overnight will be solid, and should be fried. Which is, btw, very good.
