Hi,

Serious Eats has weekly submissions from Kenji Alt (formerly of CI) with wonderful technical lessons. Over the past two years, his Food Lab has provided better information than CI, all of it tinged with his irreverent sense of humor. Kenji also writes for the GoodEater Collaborative.

This week on Serious Eats he provides a new technique for caramelizing onions. As usual, Kenji has some new ideas:

    Yellow onions have the best flavor.
    Caramelizing sugar before adding onions speeds the process.
    1/4 tsp of baking soda per pound of onions speeds the process.
    Repeated deglazing with a bit of water provides for even cooking without burning.

i love his series as well and can't wait for his book. I think it was you that pointed me to that from TOB, so thanks.
interesting idea on the sugar. Once I carmelized onions it was for french onion soup for the freezer and I did a 10 pound bag and it took a few hours.
BTW, I love carmelized onions on potato pizza. thanks tim

Huge fan of Kenji. I read his posts every week on SE. Great info and as you said, well written, with a good sense of humor.

I'm a dedicated fan. I will buy his book as soon as it comes out simply to make sure he is getting paid for his efforts.

I think, though, one thing I would like him to do a little more is to really "let loose". He is still a bit in the CI mode of making great recipes consistent and ''accessible". But I'd like to see what he could achieve if he went past that constraint, and just make the absolute best possible, even if it was a pig of a technique. Get all Blumenthal :)
